Ingredients:

| | Eggs, at room temp | | 1
| cup | Plus 2 tb sugar | | 1 3/4
| cup | Unsifted all-purpose flour | | 1/2
| tsp | Baking powder | | 1/2
| tsp | Salt | | 1 1/2
| tsp | Anise extract |

Procedures:
| 1 | Grease and flour three cookie sheets. | | 2 | In large bowl, with electric mixer at medium speed, beat eggs until very thick and light. | | 3 | Gradually beat in sugar. | | 4 | Continue beating 20 minutes longer. | | 5 | At low speed, beat in flour, baking powder, salt; beat 1 minute. | | 6 | Add anise extract; beat just until blended. | | 7 | Drop by teaspoonfuls, ?inch apart, on prepared cookie sheets. | | 8 | Swirl each, to make into a circle. | | 9 | Let stand at room temperature, uncovered, 8 hours, or overnight. | | 10 | Preheat oven to 325°F. | | 11 | Bake cookies about 10 minutes, or until smooth and firm when pressed with fingertip. | | 12 | Cool cookies on wire rack. | | 13 | Then store in airtight container. | | 14 | Makes about 5 dozen. |
