Ingredients:
3 Eggs, at room temp
1 cupPlus 2 tb sugar
1 3/4 cupUnsifted all-purpose flour
1/2 tspBaking powder
1/2 tspSalt
1 1/2 tspAnise extract
Procedures:
1Grease and flour three cookie sheets.
2In large bowl, with electric mixer at medium speed, beat eggs until very thick and light.
3Gradually beat in sugar.
4Continue beating 20 minutes longer.
5At low speed, beat in flour, baking powder, salt; beat 1 minute.
6Add anise extract; beat just until blended.
7Drop by teaspoonfuls, ?inch apart, on prepared cookie sheets.
8Swirl each, to make into a circle.
9Let stand at room temperature, uncovered, 8 hours, or overnight.
10Preheat oven to 325°F.
11Bake cookies about 10 minutes, or until smooth and firm when pressed with fingertip.
12Cool cookies on wire rack.
13Then store in airtight container.
14Makes about 5 dozen.
