| 1 | Rinse chicken, pat dry. |
| 2 | Place each breast half between 2 pieces of plastic wrap. |
| 3 | Pound from the center to the edges with the flat side of a meat mallet till ?inch thick. |
| 4 | Remove plastic wrap. |
| 5 | Place one prosciutto slice atop each breast half. |
| 6 | Combine apple and 1/8 teaspoon pie spice. |
| 7 | Place a fourth of the apple mixture on each breast. |
| 8 | Fold in sides and roll up each half starting from a narrow end. |
| 9 | Secure with wooden toothpicks. |
| 10 | Sprinkle with additional apple pie spice. |
| 11 | Place in a 10x6x2 inch baking dish. |
| 12 | Bake, uncovered, in a 350 degree oven for 25 to 30 minutes until tender and no longer pink. |
| 13 | Remove picks. |
| 14 | In a small saucepan cook onion in margarine until tender. |
| 15 | Stir in flour and dash pepper. |
| 16 | Add milk. |
| 17 | Cook and stir till thickened and bubbly; cook and stir 1 minute more. |
| 18 | Stir in cheese till melted. |
| 19 | Serve sauce over chicken rolls. |
| 20 | Serve with rice or on a bed of rice, if desired. |
