Apple-prosciutto chicken

Ingredients:
4 Boned skinless chicken
Breast halves (about 1 lb.
Total)
4 Slices prosciutto or
Boiled ham
1/2 cupFinely chopped apple
1/8 tspApple pie spice
Apple pie spice
2 tbspFinely chopped green onion
1 tbspMargarine or butter
1 tbspAll-purpose flour
2/3 cupSkim milk
1/2 cupShredded provolone
Cheese (2 ounces)
Hot cooked rice (optional)
Procedures:
1Rinse chicken, pat dry.
2Place each breast half between 2 pieces of plastic wrap.
3Pound from the center to the edges with the flat side of a meat mallet till ?inch thick.
4Remove plastic wrap.
5Place one prosciutto slice atop each breast half.
6Combine apple and 1/8 teaspoon pie spice.
7Place a fourth of the apple mixture on each breast.
8Fold in sides and roll up each half starting from a narrow end.
9Secure with wooden toothpicks.
10Sprinkle with additional apple pie spice.
11Place in a 10x6x2 inch baking dish.
12Bake, uncovered, in a 350 degree oven for 25 to 30 minutes until tender and no longer pink.
13Remove picks.
14In a small saucepan cook onion in margarine until tender.
15Stir in flour and dash pepper.
16Add milk.
17Cook and stir till thickened and bubbly; cook and stir 1 minute more.
18Stir in cheese till melted.
19Serve sauce over chicken rolls.
20Serve with rice or on a bed of rice, if desired.
