Ingredients:

| cup | Alphabet spaghetti | | 2
| med | Onions, coarsely chopped | | 5
| each | Garlic cloves, chopped | | 2
| tbsp | Olive oil | | 1
| small | Carrot, diced | | 2
| tsp | Ginger, grated | | 2
| cup | Tomatoes, diced | | 6
| cup | Stock | | 1/2
| each | Cabbage, thinly sliced | | 15
| each | Fresh mint leaves, sliced | | | Salt & pepper | | | Cayenne |

Procedures:
| 1 | Cook pasta until al dente. | | 2 | Drain & set aside. | | 3 | Lightly saute onion & garlic in olive oil until softened. | | 4 | Stir in ginger & carrot & cook for a few monents. | | 5 | Add tomatoes, stock & cabbage. | | 6 | Cook over medium heat until the vegetables are tender, 15 to 20 minutes. | | 7 | Adjust seasonings if necessary. | | 8 | Ladle soup over several spoonfuls of cooked pasta. | | 9 | Season with fresh mint & serve immediately. |
