Goan ginger-scented tomato & cabbage soup

Ingredients:
1/2 cupAlphabet spaghetti
2 medOnions, coarsely chopped
5 eachGarlic cloves, chopped
2 tbspOlive oil
1 smallCarrot, diced
2 tspGinger, grated
2 cupTomatoes, diced
6 cupStock
1/2 eachCabbage, thinly sliced
15 eachFresh mint leaves, sliced
Salt & pepper
Cayenne
Procedures:
1Cook pasta until al dente.
2Drain & set aside.
3Lightly saute onion & garlic in olive oil until softened.
4Stir in ginger & carrot & cook for a few monents.
5Add tomatoes, stock & cabbage.
6Cook over medium heat until the vegetables are tender, 15 to 20 minutes.
7Adjust seasonings if necessary.
8Ladle soup over several spoonfuls of cooked pasta.
9Season with fresh mint & serve immediately.
