Ingredients:
3 lbsBeef Roast, boneless, chuck
3/4 cupOnion
1 tbspOil
1 canPineapple chunks, (juice
-packed) 15 ?oz.
1 cupOrange juice
3 tbspTapioca, quick-cooking
3 tspCurry powder
1 1/2 tspBeef bouillon granules
1/4 tspPepper
2 Bay leaves
16 ozApricot halves, drained
Hot cooked rice
3/4 cupPeanuts, chopped
Procedures:
1Trim fat from meat; cut meat into ?inch cubes.
2In a large skillet brown meat cubes and onion, half at a time, in hot oil.
3In crock pot, combine undrained pineapple, orange juice, tapioca, curry powder, bouillon granules, pepper, and bay leaves.
4Add meat and onion to cooker.
5Cover; cook on low-heat setting for 9 ?11 ?hours or on high heat setting for 3 ?4 ?hours.
6Add drained apricots, cover; cook on low or high heat setting for 30 minutes more.
7Serve over rice.
8Sprinkle peanuts on top of beef
