Ingredients:
3 lbsLamb
1/2 lbsButter or margarine
4 ea Scallions, chopped
1 1/2 lbsTomatoes, peeled, strained OR
1 tbspTomato paste + 2 c. water
1 tbspDill, chopped
1 tbspParsley, chopped
Salt & pepper to taste
4 lbsPeas, shelled, washed
Water as needed
Procedures:
1Cut meat into 1 ? cubes (approx)..
2Wash and drain.
3Brown butter in a pot.
4Add meat and brown well.
5Add scallions, and cook until soft but not dark.
6Add tomatoes (or diluted tomato paste), dill, parsley, salt & pepper.
7Simmer abt.
820 min. add peas and an addt"l.
91 c. water.
10Cover, simmer until all liquid is absorbed and only butter remains as a sauce
