Ingredients:
3 lbsLeg of lamb
Salt & pepper to taste
4 tbspButter
1 ea Med. onion, chopped
1 eachCarrot, minced
1 tbspParsley, chopped
1 lbsTomatoes, peeled, strained
3 lbsPotatoes
Water as needed
Procedures:
1Wash and dry meat; cut into 1 ? chunks; lightly salt & pepper.
2Brown the butter in lge.
3Pot.
4Add meat and brown well on all sides.
5Remove and place in deep dish.
6Add onion to the pot with the butter and let it brown.
7Add carrot and parsley, and cook until they wilt.
8Add tomatoes; bring to aboil.
9Add meat and 1 c. of hot water.
10Partially cook over low heat for abt.
1130 min. menwhile, peel potatoes, cut into 2 or 3 pcs.
12Add to pot.
13Add a little salt & pepper, and cook until potatoes are tender and most of the liquid has been absorbed (30 to 45 min).
