Ingredients:
| 3
| lbs | Leg of lamb | | | Salt & pepper to taste | | 4
| tbsp | Butter | | | 1 ea Med. onion, chopped | | 1
| each | Carrot, minced | | 1
| tbsp | Parsley, chopped | | 1
| lbs | Tomatoes, peeled, strained | | 3
| lbs | Potatoes | | | Water as needed |

Procedures:
| 1 | Wash and dry meat; cut into 1 ? chunks; lightly salt & pepper. | | 2 | Brown the butter in lge. | | 3 | Pot. | | 4 | Add meat and brown well on all sides. | | 5 | Remove and place in deep dish. | | 6 | Add onion to the pot with the butter and let it brown. | | 7 | Add carrot and parsley, and cook until they wilt. | | 8 | Add tomatoes; bring to aboil. | | 9 | Add meat and 1 c. of hot water. | | 10 | Partially cook over low heat for abt. | | 11 | 30 min. menwhile, peel potatoes, cut into 2 or 3 pcs. | | 12 | Add to pot. | | 13 | Add a little salt & pepper, and cook until potatoes are tender and most of the liquid has been absorbed (30 to 45 min). |
