Ingredients:

| lbs | Beef Top Round steak | | 1/2
| cup | Beef broth | | 1/4
| tsp | Salt | | 3/4
| cup | Chopped Green or Red Pepper | | 1
| tsp | Curry powder | | 2
| x | Sm Potatoes, halved * | | 2
| tsp | Cornstarch | | 3/4
| cup | Chopped Onion | | 1
| tbsp | Cooking oil | | | Med Tomato, coarsely chopped |

Procedures:
| 1 | * halved and thinly sliced (?lb total) partially freeze meat. | | 2 | Thinly slice across the grain into bite sized strips. | | 3 | Set aside. | | 4 | Cook sliced potatoes in boiling water about 5 minutes or till tender. | | 5 | Drain and set aside. | | 6 | Meanwhile, for sauce, stir together beef broth, cornstarch, and salt. | | 7 | Set aside. | | 8 | Spray a wok or large skillet with pam. | | 9 | Heat over med-high heat. | | 10 | Add onion and stir fry about 2 minutes. | | 11 | Add green or red pepper and stir fry about 2 minutes more or till vegetables are crisp-tender. | | 12 | Remove from wok. | | 13 | Add oil to hot wok. | | 14 | Add beef and curry powder. | | 15 | Stir fry 2-3 minutes or till beef is done. | | 16 | Push beef from center of the wok. | | 17 | Stir sauce and add to center of wok. | | 18 | Cook and stir till thickened and bubbly. | | 19 | Stir in onion mixture, potatoes, and tomato. | | 20 | Cook and stir all ingredients for 1 minute or till heated through. | | 21 | **** per serving: 251 calories, 23 g protein, 21 g carbohydrates, 8 g fat, 53 mg cholesterol, 414 mg sodium, 714 mg potassium |
