Ingredients:

| | Eggs | | 1
| cup | Oil | | 2
| cup | Flour | | 1/4
| tsp | Baking powder | | 2
| cup | Sugar, brown or white | | 2
| cup | Zucchini, peeled and grated | | 1
| tsp | Salt | | 3
| tsp | Cinnamon | | 3
| tsp | Vanilla |

Procedures:
| 1 | Beat eggs, oil, sugar and zucchini. | | 2 | Sift dry ingredients together and add to mixture. | | 3 | Add vanilla. | | 4 | Pour into 2 greased and floured loaf pans. | | 5 | Bake at 350 °F for 1 hour. | | 6 | Test tops by touching with one finger before removing from oven. | | 7 | Freezes excellent. |
