Ingredients:

| can | Solid-pack tuna, drained | | 8
| oz | Elbow macaroni, cooked | | 4
| tbsp | Butter | | 2
| tbsp | Onion, minced | | 1 1/2
| tbsp | Green pepper, minced | | 2
| tbsp | Flour (instant) | | 3/4
| tsp | Salt | | 1
| dash | Pepper, generous | | 1
| cup | Milk | | 1/2
| cup | Frozen green peas, (opt) | | 1
| can | Cream of mushroom soup | | 1
| cup | Sharp cheddar cheese | | | -shredded, divided | | 2
| slice | Bread, buttered and cubed | | | Paprika, generous sprinkle |

Procedures:
| 1 | Preheat oven to 350 degrees. | | 2 | Cook macaroni until tender, drain. | | 3 | Melt butter in same pot, add onions and green pepper and saute over low heat 5 minutes. | | 4 | Add flour, salt and pepper and stir to blend well. | | 5 | Add milk and mushroom soup and stir over low heat until smooth. | | 6 | Add macaroni, flaked tuna, peas and ?the cheese to sauce and stir to blend well. | | 7 | Pour into 2-quart buttered casserole, top with remaining cheese. | | 8 | Top cheese with 2 slices battered day-old bread cut in cubes, and sprinkle bread with paprika generously. | | 9 | Bake at 350 °F for 35 minutes, or until nice and brown. | | 10 | This casserole reheats easily over low heat in saucepan, or in microwave at 50%. | | 11 | Like most casseroles, it tastes even better reheated. |
