Ingredients:

1 canSolid-pack tuna, drained
8 ozElbow macaroni, cooked
4 tbspButter
2 tbspOnion, minced
1 1/2 tbspGreen pepper, minced
2 tbspFlour (instant)
3/4 tspSalt
1 dashPepper, generous
1 cupMilk
1/2 cupFrozen green peas, (opt)
1 canCream of mushroom soup
1 cupSharp cheddar cheese
-shredded, divided
2 sliceBread, buttered and cubed
Paprika, generous sprinkle
Procedures:
1Preheat oven to 350 degrees.
2Cook macaroni until tender, drain.
3Melt butter in same pot, add onions and green pepper and saute over low heat 5 minutes.
4Add flour, salt and pepper and stir to blend well.
5Add milk and mushroom soup and stir over low heat until smooth.
6Add macaroni, flaked tuna, peas and ?the cheese to sauce and stir to blend well.
7Pour into 2-quart buttered casserole, top with remaining cheese.
8Top cheese with 2 slices battered day-old bread cut in cubes, and sprinkle bread with paprika generously.
9Bake at 350 °F for 35 minutes, or until nice and brown.
10This casserole reheats easily over low heat in saucepan, or in microwave at 50%.
11Like most casseroles, it tastes even better reheated.
