Ingredients:
1 cupMillet
1 eachOnion
1 eachCarrot
1 xOlive oil
4 cupBoiling water
1 tbspSoy sauce (Tamari is best)
Procedures:
1Toast millet in a dry pan until it pops and turns a golden color.
2Remove millet from pan.
3Pour enough oil in pan to lightly coat bottom.
4Saute chopped onion until it turns translucent.
5Add chopped carrot (a cup of chopped hard squash works ok too).
6Saute a few minutes more.
7Add water, millet and about a tbsp. of high quality soy sauce or tamari.
8Bring to boil and then simmer covered for about 20 minutes
