Herbed fresh tomato soup

Ingredients:
2 medOnions, thinly sliced
2 tbspOlive oil or cooking oil
2 1/2 cupWater
6 medTomatoes, peeled and
-quartered (about 2 lbs)
1 6 oz can tomato paste
2 tbspSnipped fresh basil, or 2
-tsp dried, crushed basil
1 tbspSnipped fresh thyme, or 1
-Tbl dried, crushed thyme
1 tbspInstant chicken bouillon
-granules
1/2 tspSugar
1/2 tspSalt
1/4 tspPepper
Few dashes bottled hot
-pepper sauce
Snipped parsley
Procedures:
1Servings: 8
2in a large saucepan, cook onion in hot oil till tender.
3Stir in water, tomatoes, tomato paste, basil, thyme, bouillon granules, sugar, salt, pepper and hot pepper sauce.
4Bring to boil, reduce heat.
5Cover and simmer 40 min. place about 1/3 of tomato mixture in a blender container or food processor bowl and process until smooth.
6(or press through food mill).
7Repeat with remaining mixture.
8Reheat half of mixture and serve immediately.
9To freeze, cool the remaining mixture and pour into a 3 cup freezer container seal, label and freeze.
10To serve frozen portion, transfer to medium saucepan.
11Cover and cook over med. heat for 20 - 25 minutes or until heated through, stirring occasionally.
12Sprinkle with parsley before serving.
13serves 4.
