Ingredients:
2 tbspOlive oil
3 medLeek, washed, sliced thin
4 cupReduced sodiun chicken
-broth -- defatted
1 largeRed potato, scrubbed&diced
2 tspDried thyme
1/2 tspSalt, or to taste
1/2 tspFreshly ground black pepper
--- or to taste
1/2 cupOrzo
15 ozWhite beans, drained&rinsed
2 Zucchini, trimmed, 1/
-4'd, sliced thin
1 lbsSpinach, stemmed&washed
2 tbspCider vinegar
2 tbspFreshly grated paremesan
Procedures:
1Recipe by: eating well feb 96 in a large pot or dutch oven,heat the oilve oil over med-high heat.
2Add the leeks and cook,striing occasionally,until soft,approximate 3-4 minutes.
3Add the broth and 1 cup water.
4Add potatoes,thyme and s&p.
5Bring to a boil,reduce heat to low and let simmer for 5 minutes,covered.
6Add the orzo and cook,striing to prevent sticking,for 5 minutes.
7Add the beans and zuchinni.
8Cook,partially covered for about 8 more minute or until pasta and veggie are tender.
9Stir in the spinach and cook 2 more minutes.
10Season with the vinegar.
11Ladle into bowls and sprinkle on the cheese.
12Makes 8 cups.
