Ingredients:
1 cupIdaho Great Northern Beans
-- rinsed
Water
1/2 cupChopped onion
1 tspMinced garlic
1 tbspDry basil
1 tspDry oregano
1 tspSalt
Pepper, to taste
Leftover ham or beef bones
16 ozTomatoes, undrained
4 cupThinly sliced vegetable
--(carrots, zucchini
--celery, cabbage)
1/2 cupSmall macaroni
1/4 cupChopped parsley
Grated Parmesan cheese
Procedures:
1Add beans to 3 cups boiling water; boil for 2 minutes.
2Cover and let stand 1 to 4 hours.
3Drain and rinse well.
4Place beans in kettle.
5Add 6 cups water, onion, garlic, basil, oregano, salt, pepper and ham or beef bones.
6Bring to boil.
7Cover and simmer 1 hour or until beans are almost tender.
8Add tomatoes, vegetables, macaroni and parsley, breaking up tomatoes.
9Cover and simmer ?hour longer or until ingredients are done.
10Add more water if a thinner consistency is desired.
11Adjust seasonings.
12Serve with grated parmesan cheese.
13Makes 2 to 2-?quarts.
