Ingredients:
1 1/2 cupMashed, cooked squash, -OR-
12 ozFrozen cooked squash
1 cupFinely chopped hazelnuts
-(Oregon)
1/2 cupFinely chopped onion
1 quartChicken broth or stock
Salt to taste
1/4 tspPepper
2 tbspButter or margarine
2 tbspSherry
Procedures:
1Combine squash, hazelnuts, onion and broth in saucepan.
2Bring to a boil; cover and simmer 30 minutes, stirring occasionally.
3Stir in salt to taste, pepper, butter and sherry.
4Garnish with roasted and sliced hazelnuts, if desired.
