Ingredients:
| 3/4
| cup | White flour | | 3/4
| cup | Whole wheat flour | | 2/3
| cup | Lightly toasted wheat germ | | 1/2
| tsp | Salt | | 1/2
| tsp | Baking soda | | 1
| tsp | Baking powder | | 1/2
| tsp | Ground cinnamon | | | Egg | | 1/2
| cup | Brown sugar | | 1/2
| cup | Safflower oil | | 1
| cup | Sourdough starter, room temp | | 1
| cup | Unsweetened thick applesauce |

Procedures:
| 1 | Combine flours, wheat germ, salt, baking soda, baking powder and cinnamon and blen well. | | 2 | In lg bowl, beat egg lightly and blend in sugar and oil. | | 3 | Mix in starter and applesauce and mix well. | | 4 | Add mixture and stir just until dry ingredients are moistened. | | 5 | Spoon into 4 prepared ** #4 loaf pans and bake in oven preheated to 350°F for 50 mins or until bread tests done. | | 6 | Cool on wire rack 10 mins, turn out, turn right side up, remove waxed paper and cool. | | 7 | **to keep quick breads from sticking to pan, line pan with strip of waxed paper; oil pan, place paper in pan invert paper so that batter is on oiled surface. |
