Ingredients:
1 lbsCalf's feet or soup bones
2 tbspOil or butter
5 lbsYellow onions
- peeled and roughly chopped
2 tbspMinced garlic
1/4 tspGround mace
4 cupChicken stock or water
4 Bay leaves
Salt and pepper, to taste
Procedures:
1Place bones, oil and onions in a large pot and place over low heat.
2Cook, stirring, until the onions change color from light to dark, about 1 hour.
3Add garlic, mace, stock, bay leaves, salt and pepper.
4Cover and simmer for 45 minutes.
5Remove the bones and bay leaves and serve the soup.
