Ingredients:

| lbs | Calf's feet or soup bones | | 2
| tbsp | Oil or butter | | 5
| lbs | Yellow onions | | | - peeled and roughly chopped | | 2
| tbsp | Minced garlic | | 1/4
| tsp | Ground mace | | 4
| cup | Chicken stock or water | | 4
| | Bay leaves | | | Salt and pepper, to taste |

Procedures:
| 1 | Place bones, oil and onions in a large pot and place over low heat. | | 2 | Cook, stirring, until the onions change color from light to dark, about 1 hour. | | 3 | Add garlic, mace, stock, bay leaves, salt and pepper. | | 4 | Cover and simmer for 45 minutes. | | 5 | Remove the bones and bay leaves and serve the soup. | | 6 | Michael roberts - prodigy guest chefs cookbook |
