Ingredients:
2 White onions, thinly sliced
3 tbspButter
2 tbspChopped fresh parsley
2 Cloves garlic, finely choppe
2 Bay leaves
1/2 cupProsciutto or cooked ham
4 cupChicken Broth
3 cupWater
1 tspPepper
4 Potatoes, shredded
1/4 cupGrated Romano cheese
Procedures:
1Cover and cook onions in butter in 4 qt dutch oven over medium-low heat 10 minutes.
2Stir in parsley,garlic, bay leaves and prosciutto.
3Cook, uncovered, over high heat 5 minutes, stirring frequently.
4Stir in remaining ingredients except cheese.
5Heat to boiling.
6Reduce heat.
7Cover and simmer 30 minutes, stirring occasionally.
8Remove bay leaves.
9Top each serving with cheese.
10Slow-simmering soup is enriched with diced prosciutto and freshly grated romano cheese.
