Ingredients:
1 1/2 tbspButter
1 largeWhite onion, chopped
2 clGarlic, minced
1 1/2 cupWater
2 tbspDry sherry
1/2 cupWater
1/2 lbsLean bacon
6 Stalks celery sliced
Diagonally
3 cupCubed new potatoes w/skin
1 1/2 cupMilk, cream or yogurt
4 tbspFlour
Procedures:
1In dutch oven, saute bacon in butter until bacon in browned.
2Add onion, celery, garlic, potatoes, 1 ?c water and milk.
3Bring to boil and simmer 30 minutes uncovered.
4Combine sherry, water and flour.
5Whisk sherry mixture into chowder and simmer until thickened.
6Add salt and fresh black pepper to taste.
7makes 6 servings.
