Ingredients:

| tbsp | Butter | | 1
| large | White onion, chopped | | 2
| cl | Garlic, minced | | 1 1/2
| cup | Water | | 2
| tbsp | Dry sherry | | 1/2
| cup | Water | | 1/2
| lbs | Lean bacon | | 6
| | Stalks celery sliced | | | Diagonally | | 3
| cup | Cubed new potatoes w/skin | | 1 1/2
| cup | Milk, cream or yogurt | | 4
| tbsp | Flour |

Procedures:
| 1 | In dutch oven, saute bacon in butter until bacon in browned. | | 2 | Add onion, celery, garlic, potatoes, 1 ?c water and milk. | | 3 | Bring to boil and simmer 30 minutes uncovered. | | 4 | Combine sherry, water and flour. | | 5 | Whisk sherry mixture into chowder and simmer until thickened. | | 6 | Add salt and fresh black pepper to taste. | | 7 | makes 6 servings. |
