New england creamy clam chowder

Ingredients:
4 Slices bacon or salt pork
1/2 cupOnion, finely chopped
4 medPotatoes, peeled, diced
2 canMinced clams with liquid
-(6 oz. each)
1 cupBottled clam juice
1 cupHalf-and-half
Salt (to taste)
Pepper (to taste)
1/2 cupWhipping cream (optional)
2 tbspParsley, finely chopped
Procedures:
1In a large heavy saucepan or skillet, saute bacon or pork until brown and crisp.
2Drain on paper towels.
3Dice or crumble.
4In same skillet saute chopped onion and potatoes for a couple of minutes.
5Sprinkle with flour.
6Add clam juice from cans and from bottle.
7Stir to combine.
8Bring to a boil.
9Simmer, stirring from time to time, until potatoes are soft, about 15 minutes.
10Add half-and-half and season to taste with salt and pepper.
11Add minced clams.
12Heat until simmering.
13Do not boil.
14Add whipping cream, if used.
15Sprinkle with parsley or diced pork or bacon.
16Serve immediately.
