My canadian pea soup

Ingredients:
1 cupSplit peas
3 cupWater (cold)
2 lbsSmoked ham, shank or bone
3 quartWater, boiling
1 Onion, chopped
Celery leaves
1 tspSalt
2 Carrots, minced
Procedures:
1Wash and sort peas; soak in cold water overnight.
2Drain and place in a large pot; add water, ham bone, onion, celery leaves, carrots, salt.
3Bring to a boil; reduce heat and simmer until peas are very tender, about 2 hours, adding more water if needed.
4Remove ham; chop and return to soup.
5Season to taste with salt and pepper.
6Also freezes well.
