Mushroom-short rib soup

Ingredients:
4 tbspUnsalted butter
2 medOnions, finely minced
4 cup:water
1/2 lbsBeef short ribs
6 tbspBarley
2 tbspSherry
2 tbspFreshly chopped thyme leaves

1 tsp-Dried thyme
1 tspSalt
Freshly ground pepper
-to taste
3 cupSliced mushrooms
Procedures:
1Melt butter in a 2-quart pot over medium heat on the stove.
2Add the onions and cook covered, stirring occasionally, for 10 minutes or until the onions are soft.
3Add the water and the ribs, increase heat to high and bring to a boil.
4Boil, skimming the soup for 5 minutes.
5Reduce the heat to low, cover and cook for 1 hour.
6Add the barley and cook 20 minutes.
7Add the sherry, thyme, salt and pepper and mushrooms.
8Simmer an additional 15 minutes.
