Mushroom clam chowder

Ingredients:
1/2 cupFresh mushrooms, chopped
1 tspVeg oil
7 ozMinced clams (canned)
1/2 cupCelery, chopped
1/3 cupOnion, chopped
1/2 tspSalt
1/8 tspPepper
1/8 tspCayenne
1 1/3 cupNonfat dry milk powder
1 1/2 cupCold water
1 tbspCornstarch
2 tbspFresh parsley, minced
Procedures:
1Heat oil in saucepan and saute mushrooms.
2Stir in undrained clams, celery, onion, salt, pepper and cayenne.
3Cover and let simmer for 5 minutes.
4Mix together milk powder, water, and cornstarch (you may substitute 1 ?c skim milk for the powder & water).
5Stir milk mixture into saucepan and simmer over low heat until soup thickens.
6Pour into serving bowls and top each serving with ?t parsley.
