Mushroom and kidney soup

Ingredients:
1 Ox kidney
2 quartStock
1 ozFlour
1 ozDripping
1 largeOnion
1 tspSalt
1 tspMustard
1 tspSugar
1 tbspRice
A sprinkle of pepper
1/2 lbsMushrooms
Procedures:
1Soak the kndney in warm salted water for 30 mins.
2Wash the mushrooms, peel and cut into pieces, chop the stalks finely.
3Cut the kidney into small pieces, removing the hard core and fat.
4Peel and chop the onion.
5Heat the fat in a big saucepan and fry the onion and kidney and mushrooms for five mins, turning to cook evenly.
6Push to one side and stir in the flour and seasonings, then stir in half the stock and stir until it boils.
7Cover and simmer gently for ?hour, then add the well washed rice and remainder of stock.
8Continue to simmer gently for 12-15 mins more or until rice is tender.
9Skim if necessary and serve
