Ingredients:
1 Envelope unflavored gelatin
3/4 cupCold water
1 canCampbells consomme
1 canRed beets, diced 8 oz.
1 tbspLemon juice
2 tbspThinly sliced green onion
1 cupSour cream
Procedures:
1In saucepan, sprinkle gelatin on cold water to soften.
2Place over low heat, stirring until gelatin is dissolved.
3Remove from heat; stir in consomme, liquid from beets and lemon juice.
4Chill until slightly thickened.
5Fold in beets and 1 tablespoon onion.
6Pour into 4 cup ring mold; chill until firm.
7Unmold on lettuce.
8Fill center of mold with sour cream, garnish with remaining onion.
