Ingredients:
2 tbspVegetable oil
2 eachGarlic cloves, diced
1 largeOnion, diced
2 eachCarrots, diced
2 eachCelery stalks, chopped
7 cupVegetable stock
1 cupMixed vegetables
1/2 tspSalt
1 tspParsley
1/4 tspCayenne pepper
2 tbspTamari
1 cupPasta shells
4 tbspMiso, or more to taste
Procedures:
1In a large pot, heat the oil over medium high heat.
2Add the garlic & onions & saute for 2 minutes.
3Add the carrots & celelry & saute for another 5 minutes.
4Add the stock, mixed vegetables & herbs & spices.
5Cook for 1 hour.
6Add the shells & continue to cook till tender.
7Dilute the miso in 1 cup warm stock.
8Add to the soup & simmer for 30 minutes.
