Ingredients:
3/4 cupChopped onion
2 Cloves garlic, minced
1 tbspVegetable oil
2 can(14 ?ounces each)
Vegetable broth
2/3 lbs(2 medium) potatoes
Cut into ?inch cubes
1 1/2 cupFrozen mixed vegetables
1 can(8 ?ounces) red kidney
Beans, drained
1 tspDried Italian herb
Seasoning
1 Opt. sprinkle Grated
[FF] parmesan cheese
Procedures:
1In 3-quart saucepan over medium heat saut onions and garlic in oil 5 minutes.
2Add broth and potatoes; bring to boil, reduce heat, cover and cook until potatoes are just tender, about 10 minutes.
3Add vegetables, beans and herb seasoning.
4Cover and simmer 10 minutes.
5Ladle into bowls.
6Sprinkle each serving with cheese.
