Ingredients:
1/2 lbsSoup beans, dried
1/2 lbsBlack beans
4 largePotatoes
4 tbspOil
4 tbspSalt
1/2 tspBlack pepper
1/2 cupShallots, chopped
Procedures:
1Wash, soak & cook the dried peas as indicated on the package.
2Retain the cooking water.
3Cook the potatoes & save the cooking water.
4Measure the reserved cooking waters to 8 cups: add fresh water if necessary.
5Pour into a soup pot.
6Crush the peas & beans with the potatoes & add to the liquid, with the remaining ingredients.
7Simmer slowly for 1 hour.
