Ingredients:

| lbs | Soup beans, dried | | 1/2
| lbs | Black beans | | 4
| large | Potatoes | | 4
| tbsp | Oil | | 4
| tbsp | Salt | | 1/2
| tsp | Black pepper | | 1/2
| cup | Shallots, chopped |

Procedures:
| 1 | Wash, soak & cook the dried peas as indicated on the package. | | 2 | Retain the cooking water. | | 3 | Cook the potatoes & save the cooking water. | | 4 | Measure the reserved cooking waters to 8 cups: add fresh water if necessary. | | 5 | Pour into a soup pot. | | 6 | Crush the peas & beans with the potatoes & add to the liquid, with the remaining ingredients. | | 7 | Simmer slowly for 1 hour. |
