Ingredients:
2 Onions, finely chopped
1 lbsBeef Shank
6 cupCold Water
Salt
Black Pepper, freshly ground
2 Carrots, diced, peeled
1 cupCelery, diced
3/4 cupRutabagas, diced
1 cupTomato Juice
1 cupBroccoli cut in small floret
1/2 cupSmall Pasta Shells
Procedures:
1In a large stockpot, combine onion, beef shank and water.
2Season with salt and pepper; bring to a boil and skim.
3Cover and reduce heat; simmer for 1 hour.
4Add carrots, celery, rutabaga and tomato juice.
5Cover and cook for 45 minutes more or until meat is tender.
6Remove bone and finely chopped meat; return to soup.
7Add broccoli and pasta shells; cook for 10 to 15 minutes more.
8Adjust seasonings
