Ingredients:
1 1/4 cupChopped peeled cucumber
-divided
1/2 cupChopped green bell pepper
2 tbspChopped onion
1 tbspChopped seeded jalapeno

1 tbspWhite vinegar
1/2 tspSugar
1/4 tspSalt
1/4 tspDried oregano
1/4 tspHot sauce, (?to ?
1 Clove garlic, halved
14 1/4 ozNo-salt-added whole
-tomatoes, (1 can) undrained
3/4 cupWater
Procedures:
1Place 1 cup cucumber and next 10 ingredients (cucumber through tomatoes) in a food processor, and process until mixture is pureed.
2Pour into a bowl; stir in water.
3Cover and chill.
