Ingredients:
2 lbsCoarse ground beef
1/2 lbsFlank steak ? cubs
1/2 lbsReg. ground beef
15 ozTomato sauce
12 ozBeer
12 ozTomato paste
1 tbspYellow cornmeal
1 tbspRed wine vinegar
1/4 cupInstant minced onion
1/4 cupChili powder
1 tspCrushed red pepper
1 tspGround cumin
1/4 tspBasil leaves
1/4 tspCaraway seeds
1/4 tspCoriander
1/4 tspMarjoram
1/4 tspGround red pepper
1/3 tspGinger
1/3 tspTarragon
1/3 tspDill seed
1/3 tspPaprika
1/3 tspGround tumeric
1/3 tspGround caramon
1 dashCurry
1 dashDill weed
1 dashRosemary
1 dashSaffron
1 dashThyme
1 Bay leaf, crushed
1 Cinnamon stick
1 1/2 tspMinced garlic
1 1/2 tspSalt
1 tbspOrgeano leaves
2 tbspSalad oil
Procedures:
1In a large saucepan, heat oil until hot.
2Add beef cubes; brown on all sides, remove and set aside.
3Add ground beef, both grinds, brown , stirring to crumble.
4Add tomato sauce, tomato paste, one cup of water, vinegar and all the other dry ingredients listed.
5(mix the cornmeal, onions, all the spices in a bowl then add them after the meat has been cooked).
6Also add the browned beef cubes, stir well, then add the beer and stir some more until all the ingredients are mixed well.
7Simmer, covered, strring occasionally, for at least 2 hours.
8This can be prepared early in the day and kept on low heat to let spices blend togather.
9Add more water if needed.
10Remove cinnamon stick before serving
