Ingredients:
2 Broiler chickens (about 2 lb
-each), split lengthwise
Salt and pepper to taste
1/2 cupTomato sauce
1/2 cupCider vinegar
1/4 cupSherry wine
1 tspDry mustard
1/4 tspChili powder
1/8 tspRed peppersauce
1/8 tspOregano
1/2 tspWorchestershire sauce
1 clGarlic, mince fine
1 cupCatsup
1 tbspSoy sauce
1/4 cupSalad oil
1 tspLiquid smoke
1 tspSalt
1/2 tspWhite pepper
1/4 cupSugar
1 1/2 tspCornstarch
3 tbsp-water
Procedures:
1Place broiler halves in a baking pan and sprinkle with salt and pepper to taste.
2Cover with foil.
3Bake at 325 deg for about 45 minutes.
4Remove foil and abke 15 minutes longer or until lightly browned and tender when pierced with a sharp knife.
5Meanwhile, combine all ingredients except cornstarch and water in a saucepan and bring to a boil.
6Dissolve cornstarch in water and stir into sauce.
7Cook and stir until mixture boils again and is thickened.
8Cook 2 minutes.
9Makes about 3 cups.
10Serve sauce over baked broilers.
11Refrigerate any leftover sauce.
