Ingredients:
1 tspOlive oil
1 smallOnion, chopped
1 Potato, peeled and diced
1 Celery stalk, chopped
1/4 cupSweet red pepper, diced
1 pinchHot pepper flakes
1 cupChicken stock
1/2 cup1% milk
10 ozCanned creamed corn
1/4 cupFrozen corn kernels
1/4 tspSalt
1/4 tspPepper
1 tbspFresh coriander, chopped, or
Basil, thyme, parsley
Procedures:
1In heavy saucepan, heat oil over medium heat; cook onion, potato, celery, red pepper and hot pepper flakes, covered and stirring often, for 5 minutes.
2pour in stock and bring to boil; reduce heat and simmer, covered, for 10 minutes or until potato is tender.
3add milk, creamed corn, frozen corn, salt and pepper; heat gently until steaming.
4Serve sprinkled with coriander.
