Ingredients:
1 cupLentils, Dried Quick-Cooking
6 cupWater
2 Bacon, Slices, Diced
1 Leek or Green Onion, *
1 Carrot, Large, Finely Chopped
1 Celery, Stalk, Finely Chopped
1 Onion, Finely Chopped
1 tbspVegetable Oil
2 tbspUnbleached Flour
1 tbspVinegar
4 Frankfurters, Thickly Sliced
1 tbspCatsup, Tomato
1 tspSalt
1/4 tspBlack Pepper
Procedures:
1* leek or green onion should be finely chopped.
2+++++++++++++++++++++++++++++++++++++++++++++++++++++++ ++++++++++++++++++ wash the lentils thoroughly.
3In a 2 ?quart saucepan bring 6 cups of water to a boil.
4Add the lentils, bacon, leek or green onion, carrot and celery.
5Simmer, partially covered, for 30 to 40 minutes.
6Meanwhile in a frypan, saute chopped onion in vegetable oil until soft.
7Sprinkle flour over onion, and stir.
8Lower heat, stir constantly, and cook until the flour turns a light brown.
9Do not burn flour.
10Stir in ?cup of hot lentil soup into the browned flour; beat with a wire whisk until well-blended.
11Beat in vinegar.
12Add contents of frypan to lentil pan and stir together.
13Cover and simmer for 30 minutes or until lentils are soft.
14Add the frankfurters and catsup.
15Cook to heat frankfurters through.
16Season with salt and pepper and serve hot.
