Lemongrass scallop soup

Ingredients:
2 tbspOlive oil
2 tbspScallions(white only), diced
Glove garlic, minced
4 cupChicken stock
1/4 cupParsley, destemmed/minced
1/2 cupLoosely pkd dried lemongrass
3 xDrops hot chile sauce/tbasco
1/4 tspSoy sauce
1/4 lbsScallops, cut bite size
Procedures:
1In large saucepan, heat the oil and lightly saute the scallions and garlic for 2-3 minutes.
2Add the chicken stock, parsley, lemongrass, chile sauce, and soy sauce.
3Bring the ligquid to a boil, cover, and simmer the soup for 1 hour.
4Strain the stock, discarding the vegetables.
5Return the soup to the rinsed saucepan and bring it to a simmer.
6Add the scallops and cook briefly (about 1 minute).
