| tbsp | Kikkoman Lite Soy Sauce | | | -- divided | | 1
| tsp | Minced fresh ginger root | | 2
| tsp | Distilled white vinegar | | 1/4
| tsp | Garlic powder | | 2
| tbsp | Vegetable oil, divided | | 1
| | Onion, sliced | | 1
| | Carrot | | | -- diagonally thinly sliced | | 1/3
| cup | Unsalted roasted peanuts |

Procedures:
| 1 | Slice pork into thin, narrow strips. | | 2 | Combine 2 teaspoons _each_ cornstarch and lite soy sauce, ginger and pork; let stand 15 minutes. | | 3 | Meanwhile, combine remaining 2 teaspoons cornstarch, 2 tbsp. plus 1 teaspoon lite soy sauce, vinegar, garlic powder and ?cup water; set aside. | | 4 | Heat 1 tbsp. oil in hot wok or large skillet over high heat. | | 5 | Add pork and stir-fry 2 minutes; remove. | | 6 | Heat remaining 1 tbsp. oil in same pan. | | 7 | Add onion and carrot; stir-fry 2 minutes. | | 8 | Add zucchini; stir-fry 2 minutes. | | 9 | Add pork and soy sauce mixture. | | 10 | Cook, stirring, until sauce boils and thickens. | | 11 | Stir in peanuts. | | 12 | Makes 2 to 3 servings |
