Ingredients:
1/4 lbsBoneless lean pork
4 tspCornstarch, divided
3 tbspKikkoman Lite Soy Sauce

1 tspMinced fresh ginger root
2 tspDistilled white vinegar
1/4 tspGarlic powder
2 tbspVegetable oil, divided
1 Onion, sliced
1 Carrot
-- diagonally thinly sliced
1/3 cupUnsalted roasted peanuts
Procedures:
1Slice pork into thin, narrow strips.
2Combine 2 teaspoons _each_ cornstarch and lite soy sauce, ginger and pork; let stand 15 minutes.
3Meanwhile, combine remaining 2 teaspoons cornstarch, 2 tbsp. plus 1 teaspoon lite soy sauce, vinegar, garlic powder and ?cup water; set aside.
4Heat 1 tbsp. oil in hot wok or large skillet over high heat.
5Add pork and stir-fry 2 minutes; remove.
6Heat remaining 1 tbsp. oil in same pan.
7Add onion and carrot; stir-fry 2 minutes.
8Add zucchini; stir-fry 2 minutes.
9Add pork and soy sauce mixture.
10Cook, stirring, until sauce boils and thickens.
11Stir in peanuts.
12Makes 2 to 3 servings
