Leek & tomato soup

Ingredients:
4 medLeeks
6 eachBoiling potatoes
3 medTomatoes
2 medOnions
5 tbspGhee
4 cupStock
2 tspSugar
Salt & pepper
Water
Procedures:
1Split & thoroughly wash leeks.
2Cut into chunks.
3Dice potaotes & chop the tomatoes.
4Thinly slice onions.
5Melt 3 tb ghee in pot & add onions & leek.
6Simmer very gently for 5 minutes.
7Add tomatoes followed by potatoes.
8Simmer gently for 2 minutes.
9Add stock.
10Bring to a boil.
11Stir in sugar, salt & pepper to taste.
12Reduce heat & simmer.
13Cook until potatoes are soft.
14Cool & then blend, using extra water if necessary.
15Re-heat before serving.
16Top with croutons.
17Thin with water if desired.
18Will keep well in the fridge.
