Ingredients:
1 lbsSpanish onions, peeled and
-cut into eighths
1/2 cupRed wine
1 1/4 cupWater
1/4 tspDried thyme or ?tsp
-chopped fresh
Salt and pepper to taste
10 Lamb kidneys (about 1 ?/td>
-lbs)
4 tbspFlour
Procedures:
1Place the onions, wine and ?cup water in saucepan.
2Season with salt, pepper and thyme, bring to boil.
3Lower heat, cover and simmer 20 minutes or until the onions are tender.
4Remove any surrounding fat and the translucent membrane from the outside of the kidneys and cut them into about 1" cubes.
5Stir the kidneys into the onion mixture, cover and simmer for 5 minutes or until the kidneys are nearly tender.
6Blend the four with the remaining water until it is smooth and mix it into the kidneys, stirring continuously until the mixture thickens.
7Simmer for a few minutes, check seasoning.
8Serves 4 kidneys are a part of the body ruled by libra, and in this dish their taste is sweet and mild and lightly flavored with wine and thyme.
9Serve this stew as a family supper dish with plenty of boiled rice and a red wine.
