Ingredients:
4 cupBeef broth or 2 tablespoons
-instant beef bouillon
Granules dissolved in 4 cups
-hot water
1 Sm. onion, chopped (?cup)
1/2 Med. green pepper, chopped
-(?cup)
1 tbspSnipped parsley
1 tspWorcestershire sauce
......
2 tbspDry sherry
2 tbspWater
1 Envelope unflavored gelatin
1/2 cupWhipping cream (optional)
1/4 tspCurry powder (optional)
Procedures:
1If using homemade beef broth, be sure that you clarify the broth before preparing this recipe.
2In saucepan combine beef broth, onion, green pepper, parsley, and worcestershire sauce.
3Bring to boiling.
4Reduce heat; simmer uncovered, for 15 minutes to reduce liquid slightly (it should measure 3 to 3 ?cups).
5Strain mixture, discarding vegetables.
6Return the strained broth to saucepan.
7In small bowl combine sherry and water; sprinkle gelatin over liquid and let stand to soften gelatin.
8Stir gelatin mixture into broth; heat and stir till gelatin dissolves.
9Pour into large bowl.
10Chill till set.
11Before serving, whip cream and curry powder just to stiff peaks.
12Break up consomme with a fork; spoon into serving dishes.
13Top each serving with a dollop of the whipped cream.
14Makes 4 to 6 servings.
