Ingredients:
1 cupPeeled and diced potatoes
1 cupDiced onions
1 cupDiced carrots
2 tbspChopped fresh dill, -OR-...
1 tbsp-Dried dill
1/4 tspGround white pepper
1 tspGranulated garlic, -OR-...
2 tsp-Minced fresh garlic
3 tbspCorn oil
4 cupWater
2 1/4 cupLight soy milk
2 tbspVegetable bouillon powder
1 cupInstant mashed potato flakes
Procedures:
1In a medium-size saucepan, saute potatoes, onions, carrots, pepper, dill and garlic in oil over medium heat for 6 minutes.
2add water, soy milk and bouillon powder.
3add potatoes flakes slowly, whipping constantly to ensure even dispersion.
4Reduce heat to low and cook, stirring occasionally, until potatoes are cooked and mixture is hot, about 15 minutes.
