| lbs | Boneless chicken, 1-inch | | | -dice | | | SWEET AND SOUR SAUCE | | 1 1/4
| cup | Onions, sliced | | 1
| cup | Green peppers, sliced | | 1/2
| cup | Cider vinegar | | 1/2
| cup | Sugar | | 1
| cup | -water | | 1
| cup | Pineapple chunks (8oz) | | 4
| tsp | Cornstarch | | 4
| tsp | -water | | | Red food colouring (opt) |

Procedures:
| 1 | There are two parts to this recipe. | | 2 | First cook the chicken, and while it is cooking, prepare the sweet and sour sauce. | | 3 | Chicken: combine all ingredients and cook, covered, over low heat 25-30 minutes until chicken is tender. | | 4 | Drain liquid and serve covered with sweet and sour sauce sweet and sour sauce: combine onions, grren peppers, vinegar, sugar, and water in a saucepan. | | 5 | Simmer 20 minutes. | | 6 | Add pineapple chnks and juice and return to boil. | | 7 | Stir in cornstarch which has been dissolved in water, cook and stir until thickened and clear. | | 8 | If desired, add red food colouring. | | 9 | Makes 2 ?cups |
