Ingredients:
1 1/2 lbsBroccoli
1/2 largeOnion, finely chopped
1/2 Carrot, finely chopped
1/2 Celery, finely chopped
2 tspMargarine, not butter
2 tbspFlour, unbleached
2 cupWater
1 Chicken bouillon cube
1 cupEvaporated skim milk not
-cream
2 tbspButter buds=ae
1/4 tspKosher salt
1/2 tspFreshly ground black pepper
Procedures:
1Recipe by: jeanne jones, cook it light 22 aug 96 preparation time: 1:00 pantry: could use 2 cups of fat free chicken broth.
2Prepare these chopped measures: 1 cup onion, ?cup carrot, ?cup= celery.
3Wash broccoli and remove large part of the stem and discard.
4Chop= separately the tops and stem and place in separate containers.
5Heat margarine over medium heat in a large saucepan.
6Add onion, carrot,= celery and broccoli stems and simmer.when onions are translucent, add the= flour.
7Cook together for 60 seconds; add 99% fat free chicken broth (or= water and bouillon).=20 bring back to a simmer and add the uncooked broccoli tops; simmer again.= remove from heat and puree in blender in 2 batches.
8Return to pot, add= buttler sprinkles, salt and pepper.
9Keep warm until served.
10Or cool then chill in the refrigerator.
11Serve= chilled.
12Makes 4-?cups.
