Ingredients:

| tbsp | Olive oil | | 2
| | Whole chicken breasts | | | -boned, skinned and pounded | | | -flat | | 1
| | Inch piece ginger, minced | | 3
| | Garlic cloves, minced | | 1
| large | Onion, sliced | | 1
| large | Red pepper, julienned | | 1
| cup | Trimmed snow peas | | 3
| tbsp | Soy sauce | | 1 1/2
| tbsp | Hoisin sauce | | 1
| tbsp | Cornstarch, mixed with 2 | | | -tb water |

Procedures:
| 1 | Grate 2 oranges and lemon; set peel aside. | | 2 | Squeeze juice from 2 oranges and lemon. | | 3 | Set aside. | | 4 | Section third orange; set sections aside. | | 5 | Heat olive oil in a large skillet; add chicken pieces, ginger and garlic. | | 6 | Saute until chicken pieces are brown on both sides. | | 7 | Reduce heat; add onion, red pepper strips and snow peas. | | 8 | Heat gently while combining juices, soy sauce, hoisin sauce and cornstarch. | | 9 | Mix well and add to skillet. | | 10 | Stir over medium heat until sauce thickens and coats chicken and vegetables. | | 11 | Add orange segments. | | 12 | Serve at once on hot plates. | | 13 | Makes 4 servings. |
