Ingredients:
1 tbspButter
1/4 cupSweet onions, diced
1 tbspGarlic, minced
1 tbspFresh hot chili pepper, minc
1/2 tspFersh ginger, minced
1 tbspCaltex chili powder
1/2 tspToasted cardamom, ground
1/8 tspCelery seed
15 ozTomato puree
1 1/2 tbspVinegar
1/3 cupMolasses
1 tbspLiquid barbecue smokeae
1/2 cupOrange juice
Procedures:
1Saute the onions and garlic over medium-low heat for about 5 min. being careful not to burn butter.
2Add the fresh chili pepper and the ginger and saute for about 2-3 more min. then add the caltex chili powder and the cardamom, and continue to cook 2-3 min. remember keep the heat low so nothing burns.
3Add the celery seed and tomato sauce, increase the heat unti the sauce almost boils, reduce the heat to medium and stir in the vinegar a the molasses.
4Stir untilheated through, add the liquid smoke and remove sau from heat.
5Let sauce steep for awhile and after about 4-5 min. add the oran juice.
6Pour everything into a blender until till you reach the desire smoothness.
7Serve hot asw a table sauce.
8This is not for basting , except during the last few min. of cooking.
9Serve hot.
