Tarragon-mustard burgers

Ingredients:
1 1/4 lbsChicken or turkey, ground
2 tspTomato paste
1/2 tspTarragon, dried
4 xTomato slices
3 xEnglish muffins, split & toa
1 Recipe tarragon mustard sauc
1 1/2 tbspButter or margarine
1 1/2 tbspDijon mustard
1 tbspVinegar, tarragon
1/4 cupSour cream, light
1/4 tspTarragon, dried
Salt, kosher, add to taste
Black pepper, ground, add to
Pepper, red, ground, add to
Procedures:
1Prepare grill or preheat broiler.
2In medium bowl, combine chicken or turkey, tomato paste, tarragon, salt & pepper.
3Form into 4 - 5 burgers and grill or broil 4 - 6 minutes on each side until burgers are cooked through and spring back to the touch.
4Place a slice of tomato and a burger on top of each muffin half.
5Top with warm tarragon-mustard sauce (recipe below).
6Serve, garnished with sprigs of fresh tarragon if desired.
7Tarragon-mustard sauce: in top of double boiler blend, 1-?tbsp butter, 1-?tbsp dijon mustard.
8Remove from heat; add 1 tbsp tarragon vinegar.
9Stir in ?cup light sour cream and ?tsp dried tarragon leaves.
10Season to taste with salt, ground black and ground red pepper to taste
