Procedures:

Heat oven to 350°F.

Line a jelly-roll pan w/foil.

Lightly grease a rack to fit in pan.

Mix chicken rub ingredients in a small until blended.

Rub all over chicken.

Tie legs together w/string.

Place chicken breastside up on rack in roasting pan.

Roast 1 hr., or until drumsticks move easily and juices run clearn when thigh is pierced.

Let stand at least 5 mins.
