Ingredients:
3 1/2 lbsWhole broiler-fryer, skin
-and wings removed
CHICKEN RUB
1/4 cupNonfat yogurt
1 tbspChili powder
2 tspCider vinegar
1 1/2 tspGarlic, minced
1 tspGround cumin
1 tspDried oregano
1 tspSalt
Procedures:
1Heat oven to 350°F.
2Line a jelly-roll pan w/foil.
3Lightly grease a rack to fit in pan.
4Mix chicken rub ingredients in a small until blended.
5Rub all over chicken.
6Tie legs together w/string.
7Place chicken breastside up on rack in roasting pan.
8Roast 1 hr., or until drumsticks move easily and juices run clearn when thigh is pierced.
9Let stand at least 5 mins.
10Before carving.
