Ingredients:
3/4 lbsLean pork, cubed
1/2 tbspVegetable oil
3/4 cupPineapple, chunk or crushed
1/2 tbspSoy sauce
1/2 tspGinger
1 pinchPepper
1 tspCornstarch
1/2 tbspWater
1/2 smallGreen pepper
1 tspCoconut, shredded, optional
Procedures:
1Cut pork into bite-sized cubes.
2Heat oil in frypan.
3Stir-fry pork until lightly brown.
4Drain pineapple.
5Set chunks aside.
6Combine pineapple liquid, soy sauce, ginger and pepper.
7Pour over pork.
8Cover and simmer 20 min. blend together cornstarch and water.
9Stir into pan juices.
10Bring to a boil, stir and cook about 3 min. until sauce thickens.
11Stir in pineapple chunks and green pepper.
12Cook 2 to 3 min. longer, stirring until mixture coats and glazes pork cubes.
13Garnish with coconut.
