Ingredients:
| 3/4
| lbs | Lean pork, cubed | | 1/2
| tbsp | Vegetable oil | | 3/4
| cup | Pineapple, chunk or crushed | | 1/2
| tbsp | Soy sauce | | 1/2
| tsp | Ginger | | 1
| pinch | Pepper | | 1
| tsp | Cornstarch | | 1/2
| tbsp | Water | | 1/2
| small | Green pepper | | 1
| tsp | Coconut, shredded, optional |

Procedures:
| 1 | Cut pork into bite-sized cubes. | | 2 | Heat oil in frypan. | | 3 | Stir-fry pork until lightly brown. | | 4 | Drain pineapple. | | 5 | Set chunks aside. | | 6 | Combine pineapple liquid, soy sauce, ginger and pepper. | | 7 | Pour over pork. | | 8 | Cover and simmer 20 min. blend together cornstarch and water. | | 9 | Stir into pan juices. | | 10 | Bring to a boil, stir and cook about 3 min. until sauce thickens. | | 11 | Stir in pineapple chunks and green pepper. | | 12 | Cook 2 to 3 min. longer, stirring until mixture coats and glazes pork cubes. | | 13 | Garnish with coconut. |
