Tandori-style game hens with corn and cumin-tomato sauce

Ingredients:
HENS
1 1/4 cupButtermilk
1/2 cupFresh cilantro, chopped
4 tspGarlic, minced
4 tspFresh ginger, minced
4 tspSerrano pepper, chopped
2 tspTurmeric
6 ea Cornish game hens, 1 ?/td>

SAUCE
1 tbspOlive oil
2 cupOnions, chopped
3 1/2 cupPlum tomatoes, seeded and
-chopped
-about 2 pounds
1/4 cupDry white wine
2 1/2 tspGround cumin
1 cupWhipping cream
CORN
1 1/2 tbspVegetable oil
4 1/2 cupCorn kernels, (from 4 ears)
1 1/2 tspGround cumin
3/4 tspTurmeric
1/2 cupFresh cilantro, chopped
Procedures:
1For hens: mix first 6 ingredients in medium bowl.
2Place hens in 15x10x2-inch glass baking dish.
3Pour buttermilk mixture over hens.
4Cover; chill overnight.
5preheat oven to 400°F.
6Transfer hens to heavy 17x11x1-inch baking pan.
7Sprinkle inside and outside of hens with salt and pepper.
8Pour marinade over.
9Bake until cooked through, basting occasionally with juices, about 1 hour 10 minutes.
10meanwhile, prepare sauce: heat oil in heavy medium saucepan over medium-high heat.
11Add onions and saute until golden, about 6 minutes.
12Add tomatoes, wine and cumin; saute until tomatoes are tender, about 10 minutes.
13Puree mixture in blender; return to saucepan.
14Add cream and simmer until slightly thickened, about 5 minutes.
15Season with salt and pepper.
16Keep warm.
17for corn: heat oil in large nonstick skillet over medium-high heat.
18Add corn, cumin and turmeric; saute until corn is heated through, about 5 minutes.
19Stir in cilantro.
20Season with salt and pepper.
21spoon some of sauce onto center of each plate.
22Place hens atop sauce.
23Spoon corn onto plates, dividing equally/

25Begin marinating the hens a day before the party.
