Ingredients:

| each | Bean thread sheets, optional | | 2
| each | Cucumbers, sliced | | 1/2
| tbsp | Salt | | 1
| x | DRESSING MIXTURE | | 1
| tbsp | Sesame seed paste (or oil) | | 2 1/2
| tbsp | Soy sauce | | 1 1/2
| tsp | Sugar | | 1
| tbsp | Vinegar | | 1 1/2
| tsp | Worchesershire sauce | | 1/4
| tsp | Garlic juice | | 1/4
| tsp | Ginger juice | | 1/2
| tsp | Hot chili sauce (optional) | | 1
| each | Dash black pepper | | 1/2
| tsp | Cornstarch |

Procedures:
| 1 | Poach or steam chicken over medium heat for approximately 10-12 minutes until done. | | 2 | Remove and let cool. | | 3 | Then shred or cut into match size strips. | | 4 | Set aside.?peel and cut cucumbers lengthwise into half, then slice into thin strips. | | 5 | Mix with ?t salt in a large bowl and slightly squeeze for a minute. | | 6 | Drain well and place evenly on a platter.?in a saucepan, add dressing mix and bring to a slow boil while stirring. | | 7 | Add stock or water if needed. | | 8 | Finally, slightly thicken. | | 9 | Transfer dressing to a container and store until needed.?to serve, place chicken strips on top of pickled cucumber and pour dressing over top. |
