Ingredients:

| cup | Shrimp, shelled & deveined | | | -OR | | 1/2
| lbs | Shrimp, shelled & deveined | | 1
| med | Onion, sliced | | 1
| | Sweet red pepper, sliced | | 1
| | Cucumber, pared and sliced | | | -? thickness | | 1
| tbsp | Soya sauce | | 1
| tsp | Sugar | | | Salt | | 3
| tbsp | Oil |

Procedures:
| 1 | Wash and slice all ingredients, as needed. | | 2 | Place oil in wok, add shrimp and onion, stir fry 2 or 3 minutes until shrimp turn white. | | 3 | Add sliced cucumber, soya sauce, sugar. | | 4 | Stir, cover wok, cook 3 minutes, lifting cover once to stir ingredients. | | 5 | Lift cover up, add red pepper and salt, to taste. | | 6 | Cover wok. | | 7 | Cook everything 2 more minutes. | | 8 | Stir everything well. | | 9 | Note: chicken can be substituted for shrimp. |
