Southern style chicken & dumplings

Ingredients:
3 eachBoneless, skinless chicken
-breasts OR 3 cups cooked
-chicken
3 cupWater
2 medPotatoes, peeled, cut into
-chunks
1 medOnion, diced
2 eachStalks celery, diced
1/4 tspBasil
1/4 tspItalian seasoning
1/2 tspMorton's Nature's Seasoning
1 tspMrs. Dash Seasoning
2 1/2 cupChicken broth
2 tspChicken bouillon granules
16 ozCan peas and carrots
DUMPLINGS:
1 cupBisquick
1/3 cupMilk
1 tspFresh minced parsley
Procedures:
1In a large pot, add water and chicken breasts and gently boil for about 30 minutes or until tender.
2Remove chicken to cool.
3Strain broth and reserve 2 ?cups.
4Cut chicken into bite-sized pieces.
5Return to pot.
6Add 2 ?cups of chicken broth, potatoes, onion, celery, basil, seasonings and chicken bouillon.
7Simmer for about 20 minutes.
8Add peas and carrots.
9Simmer about 10 minutes longer.
10Heat chicken mixture until it bubbles.
11Immediately, add large spoonfulls of a mixture of the dumpling ingredients on top of the chicken mixture in the pot.
12Immediately cover with a lid and cook over low heat for 15-20 minutes.
13Do not peek or remove the lid on the pot during this 15-20 minute cooking time! when cooking is done, gently remove the lid.
14Serve hot
